After a long day of meetings, I’m unwinding with a glass of our 2022 Estate White, reflecting on how fun work research can sometimes be. The task? Finding the perfect pairing recipes for this crisp, dry, and utterly delicious wine. With notes of pear, honeysuckle, a touch of citrus, and layers of oyster shell, it’s a wine made for food.
At Folded Hills, our approach to winemaking is simple: respect the land and let the climate, soil, sun, and fog express themselves through every bottle. Each vintage is its own surprise, a unique reflection of nature’s gifts.
As I sip, I stumbled upon not one but two incredible recipes by one of my favorite chefs, Tieghan Gerard of Half Baked Harvest. Her dishes are flavorful, comforting, and even manageable for home cooks like me. These two are perfect pairings for our Estate White:

Don’t let the name intimidate you! Saltimbocca means “jumps in your mouth” in Italian and trust me, it does.

Now, about this bottle – it holds a special place in our hearts. We call it the “Engagement Bottle“ because the label features our daughter, Lacey, and her soon-to-be husband, Charlie, during their engagement at Folded Hills. Charlie proposed on his birthday, saying if Lacey said yes, it would be the best birthday present ever. Spoiler alert: she said yes.
They were married in 2012 on the lawn in front of our house at Folded Hills, with our friend Haddon Cord singing “Cowboy Take Me Away.” It was a beautiful, ranch-style wedding that gave us three wonderful grandchildren.
As I sip from this “Engagement Bottle” tonight, I’m filled with joy, reminiscing about the day we welcomed Charlie into our family. Loving your son-in-law is a true gift, and we are so lucky to have him. This wine is perfect for celebrating life’s moments, big or small, even on a quiet Monday night like tonight.
